Apple Salad

From Dorothy McNett's recipes at www.dorothymcnedtt.com. So you have promised to eat an apple a day...this salad is a must! Serves 4 nicely, and also can be cut in half for 1-2 people.

3-4 cups fresh spinach, or other greens as desired
1-2 red apples, cored and diced
3-4 green onions, or 1 shallot, or other diced onions
1/2 cup raw walnuts, chopped
zest and juice of 1 lemon or orange (2-3 tablespoons juice)
1 tablespoon Dijon mustard
1/2 - 1 teaspoon local honey
1/3 - 1/2 cup extra virgin olive oil
freshly ground pepper
pinches of sea salt

Carefully wash and dry the greens and refrigerate. When ready to make your salad, place greens in a beautiful salad bowl and toss in the diced apples, onions, walnuts and the citrus zest. In a glass measuring cup whisk together the juice, mustard, honey and olive oil. Toss dressing with the salad ingredients, sprinkle with some freshly ground pepper and sea salt. Serve!
