Sauteed Prawns or Shrimp

From Dorothy McNett's recipes at Simply cook up some fresh shrimp or prawns with just a bit of olive oil and serve with dipping sauces and lots of fresh greens. Sometimes we tend to "over season" fresh prawns! Let the natural fresh tantalizing flavor come through and then serve with assorted dips, etc. for a great appetizer or main dish. Especially wonderful when pressed for time in the kitchen and you want to eat fresh and natural home-cooked food!

1/2 - 1 pound fresh prawns or shrimp, or more
1/2 - 1 teaspoon extra virgin olive oil
pinch of sea salt
dipping sauce (Vegetable Sandwich Spread or Dip recipe)
fresh local greens

Peel, wash and devein the seafood and pat dry with paper towel. In a heavy bottomed skillet, heat the olive oil about 30-40 seconds and then add the prawns. Cook and stir for about 1 minute, or until they turn pink and also curl up. It depends on their size, the pan, the temperature, etc. Do not overcook! Arrange on a platter and serve with dipping sauce and greens.
