Steaks with Mandarin Orange Glaze

From Dorothy McNett's recipes at Use fresh mandarins when in season, or other oranges as desired. This is also good with lean ground beef patties for hamburger sandwiches.

1-3 rib eye steaks, or other meats as desired
1/4 - 1/2 teaspoon sea salt
1 - 2 tablespons fresh rosemary, very finely minced
4 - 8 cloves garlic, very finely minced

2 - 3 tablespons olive oil, or unsalted butter,or a combination
1/4 - 1/3 cup dry red wine
1/2 - 1 tablespoon balsamic vinegar
1 - 3 mandarin oranges, to make 1/2 to 1 cup of segments

Rub the surface of the steaks with salt, rosemary and garlic. In heavy bottomed saute pan or fry pan, heat the oil or butter until the pan is nice and hot but not smoking hot. Add the steaks. Saute until golden brown on both sides and done to your liking. Remove the steaks to a platter and then pour the wine into the hot pan. Cook and stir with a silicone spatula to reduce the liquid by about 1/2 or so. Add the vinegar and orange segments and cook and stir 30-40 seconds or longer, to heat the orange pieces but not to reduce the liquids. Drizzle over the steaks and serve.
