Blueberry Jam in a Flash!
From Dorothy McNett's recipes at www.dorothymcnett.com. Got just a cup of blueberries that need to be used ASAP? ...this is a great jam for breakfast or brunch, as well as a quick and tasty dessert topping on cakes, scones, ice cream etc. Makes 1 cup of wonderful fresh jam.
1 cup fresh blueberries
Wash berries in a colander, dump them into a glass or ceramic batter bowl and stir in the sugar. Cook 2 minutes in microwave, stir, and cook another 2 minutes. Stir. Berries should be cooked and sugar dissolved, if not cook another 1 minute. Set aside to cool, or use as a warm sauce. The natural fruit pectin will set it up when it is cold. Refrigerate any leftovers and use within 1 month or so.
