Steak and Eggs

From Dorothy McNett's recipes at Traditionally made with scrambled eggs and slivered cooked steak with catsup sauce. I like to "fluff" it up a bit by making a beef steak omelette.

1 rib eye or other lean beef steak
drizzles of extra virgin olive oil
pinches of dried herbs, such as sage, rosemary and thyme
pinches of sea salt
a few grindings of pepper
1-2 teaspoons salsa or catsup, etc.

2-3 eggs, fried or poached, or make an omelette
1/4 - 1/2 cup snipped fresh parsley
grated cheese, as desired

Brush the olive oil over the steak, and then rub in the herbs, salt and pepper. Heat a grill pan or fry pan, adding just a bit of oil and then quickly saute the steak to your desired doneness, usually about 2 -3 minutes per side. Cut steak into thin slivers stirring in a bit of salsa or catsup, and set aside. Cook up some eggs, serve with the slivered steak along with snipped parsley for garnish. I favor making an omelette, tucking the beef and parsley inside.
