Malaga Wine Finished Carrots

From Dorothy McNett's recipes at Serve these as a vegetable dish, or as a tapa, or toss them into a salad. It is a nice "finish"!

3-4 medium carrots
1 - 2 teaspoons unsalted butter or extra virgin olive oil
1/4 cup Malaga wine (moscatel)

Wash and scrub the carrots and cut into serving sized pieces. Heat a heavy bottomed saute pan, adding the butter or oil. Add the carrot pieces, saute 5-6 minutes to brown a bit but not to over cook. Add the wine, cook and stir to evaporate about half the wine. Serve as desired.
