Grilled Halloumi with Fennel

From Dorothy McNett's recipes at A fabulous appetizer served with Greek Cracker Bread or pitta bread.

6-7 oz. halloumi cheese
1 fennel bulb
zest and juice of small lemon
2-3 tablespoons extra virgin olive oil

Slice the cheese about 1/4 inch thick. Thinly slice the fennel bulb. Combine the cheese, fennel, zest, juice and olive oil in a bowl and allow to stand 15-20 minutes or more. When ready to grill, remove cheese and fennel from the marinade. Preheat a griddle pan and grill the cheese and fennel slices to brown, usually just 1-2 minutes. Remove to serving plate and drizzle with marinade. Serve with pitta or cracker bread, etc.
