Roquefort Salad

From Dorothy McNett's recipes at Make sure you are using Roquefort cheese from the South of France for this typical recipe!

!/4 cup extra virgin olive oil
1/4 cup white wine vinegar
1 tablespoon raw sugar, or honey
3/4 teaspoon sea salt
1/4 teaspoon dry mustard
1/4 teaspoon freshly ground pepper
3-4 ounces Roquefort cheese
1-2 teaspoons white wine, or water
salad greens (romaine, leaf lettuce, iceberg lettuce, etc)
pitted olives
cooked baby shrimp,, or anchovies, as desired

In a glass measuring cup whisk together the olive oil, vinegar, sugar, salt, mustard and ground pepper. Crumble up the Roquefort in a small bowl and blend with the white wine. Whisk into the salad dressing. Tear up the fresh cold greens and place in a beautiful salad bowl. Toss in the dressing along with olives and shrimp or anchovies and serve!
