Cucumber Salad

From Dorothy McNett's recipes at

1-2 medium cucumbers, peeled or not
2-3 green onions, sliced
1/2 cup sour cream (organic is best!)
1/3 cup white wine vinegar, or apple cider vinegar
3/4 teaspoon sea salt
1/4 teaspoon freshly ground pepper
3 tablespoons raw sugar
1/4 teaspoon dry mustard
baby greens, as desired, for serving

Very thinly slice the cucumbers and the onion and place in bowl. Whisk together the remaining ingredients and toss into the cucumbers and onions. Arrange on salad plates covered with baby greens and serve.
