Gluten Free Pasta Dough

1 1/4 cups gluten free flour (Bob's Red Mill)
In food processor with steel chopping blade in place, whirl the flour and xanthan. Add the eggs, and then enough water to form a nice ball of dough. Remove and hand knead, shape as desired. Cook in boiling water for about 5 minutes or until al dente. Drain and use as desired. I like to drizzle with a bit of olive oil or butter, a tiny splash of wonderful balsamic vinegar, and some fresh or dried herbs. Clean out the refrigerator and add other things such as diced meats and vegetables for your dinner! Pasta can be so versatile, create!
