Curry Rice

From Dorothy McNett's recipes at Just one of many combinations of rice and spices to serve with main dishes and vegetables.

1 small onion or shallot
2-3 cloves garlic
1 tablespoon ghee or butter or olive oil
1 cup long grain white or brown rice (basmati)
2 cups water, or vegetable stock
1 1/2 - 2 teaspoons curry powder
1/4 teaspoon ground cinnamon
1/4 teaspoon paprika
1/8 teaspoon ground cloves
1/2 teaspoon sea salt

Finely chop the onion or shallot and the garlic. Place in a glass or ceramic batter bowl along with the ghee. Cook in microwave 2 minutes. Add the rice, water, spices and salt. Cover with a glass or ceramic lid. Cook in microwave for 5 minutes on full power, and then on 1/2 power (power level 5) for 10 - 15 minutes for white rice, 18 - 20 minutes for brown rice, or until tender and water has been absorbed. Or, use a rice cooker, or a heavy bottomed saucepan and cook on burner until tender!
