Teriyaki Sauce

3 tablespoons soy sauce
3 tablespoons mirin or sherry, sake, mead...
2 tablespoons raw sugar
2 garlic cloves very finely minced garlic
1 teaspoon very finely minced ginger, or more as desired
2 teaspoons cornstarch
3 tablespoons water

In heavy bottomed saucepan, combine soy sauce, mirin, sugar, garlic and ginger. Bring to a boil. In meantime, in a small bowl whisk the cornstarch with the water. When mixture is boiling, whisk in the cornstarch mixture, stir and cook until thickened up. Serve hot, warm or cold.
