Tax Thyme Muffins

From Dorothy McNett's recipes at April 15th is tax time, so why not make and serve Tax Thyme Muffins! Thyme and apples add a perfect compliment to a basic muffin recipe.

1 small apple, chopped (about 1 cup chopped)
2 cups unbleached all purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
3/4 teaspoon sea salt
1/2 cup raw sugar
1 large egg
1 cup apple juice or cider
1/4 cup extra virgin olive oil, or melted unsalted butter
1/4 - 1/3 cup fresh thyme, roughly chopped (or 2 tablespoons dried)

Preheat oven to 400 degrees. Brush some oil over muffin pan cups, or line with paper liners and set aside. Chop unpeeled apple to measure out about 1 cup, set aside. In batter bowl whisk together flour, baking powder,soda, salt and sugar. In a small bowl vigorously whisk the egg, adding the juice, oil and chopped thyme. Stir in the chopped apple. Add to the flour mixture, stirring only until flour is mixed in but do not beat or overmix. Spoon into the prepared muffin pan and bake 20 - 25 minutes or until they test done and are nicely browned. Leave in pan for 5 minutes, then turn them out onto a cooling rack to cool slightly and serve nice and warm with butter and jam as desired.
