Smoked Salmon and Cucumber Appetizer

From Dorothy McNett's recipes at www.dorothymcnett.com. Easy and delicious!

1 cucumber (long English one preferred)
1-2 cloves garlic
2 green onions
3 oz. cream cheese. softened
2-3 thin slices of smoked salmon
1/3 cup cottage cheese
zest and juice of 1 small lemon
pinch of sea salt
chives, or a green onion for garnish

Wash but do not peel the cucumber. Slice into 1 inch slices. Scoop out a bit of the center to make room for the topping. and arrange slices on a serving platter. In food processor with steel chopping blade in place and the motor running, drop in the garlic and green onions just to puree them a bit. Add the softened cream cheese, salmon, cottage cheese, zest, juice and salt and pulse to make a nice puree. Spread over the cucumber pieces, garnish with snipped green onions or chives and serve.
