Rice Cakes

From Dorothy McNett's recipes at www.dorothymcnett.com. A good way to use that left-over cooked rice! Long grain, medium grain, short grain, white, brown, green or even a combination!

1 egg
1/2 cup chopped zucchini or other squash
2-3 green onions, chopped
1/2 teaspoon sea salt
1/4 teaspoon freshly ground pepper
1 cup cooked rice
1/2 cup, more or less, freshly grated cheese (cheddar, Swiss, Jack...)
1-2 tablespoons extra virgin olive oil or unsalted butter, for frying

In a bowl whisk the egg and then add the chopped zucchini and onions, salt, pepper, rice and grated cheese. Heat a large heavy bottomed fry pan, adding oil or butter to coat the bottom. Using a tablespoon, drop dollops of the mixture into the hot pan and using a spatula flatten them to make a patty. Cook about 2 minutes per side, or until browned on both sides. Remove to a large platter and continue with the remaining batter. Serve!
