A good way to use that left-over cooked rice! Long grain, medium grain, short grain, white, brown, green or even a combination! 1 egg In a bowl whisk the egg and then add the chopped zucchini and onions, salt, pepper, rice and grated cheese. Heat a large heavy bottomed fry pan, adding oil or butter to coat the bottom. Using a tablespoon, drop dollops of the mixture into the hot pan and using a spatula flatten them to make a patty.
