New York Steak

1/4 cup unsalted butter, softened
2 - 3 cloves garlic, very finely minced
1 tablespoon or so of fresh parsley, finely snipped
zest of a small lemon
2 tablespoons lemon juice
2-4 New York steaks, 1 inch thick
freshly ground pepper
several pinches of sea salt
grapeseed oil for the pan
baby greens for the serving plates

Combine the soft butter, garlic, parsley, zest and juice. On a piece of waxed paper, shape into a roll, wrap and refrigerate. Or make dollops of the mixture and place on a plate, refrigerate. In meantime, pat each steak on both sides with pepper and salt. Heat a heavy bottomed fry pan (cast iron is great!) over high heat, adding just a splash of grapeseed oil and spread around the pan. When pan is very hot, add the steaks and sear about 4 - 5 minutes and then turn over and sear another 2 - 3 minutes. Reduce heat to medium and allow to cook gently for about 5 minutes, or done to your liking. To serve, arrange some greens over the plates and place the steak on the greens. Slice the butter and top each steak with a big dollop of it! Serve!
