Also known as: Strip steak, Delmonicos steak, Kansas City steak, and more! 1/4 cup unsalted butter, softened Combine the soft butter, garlic, parsley, zest and juice. On a piece of waxed paper, shape into a roll, wrap and refrigerate. Or make dollops of the mixture and place on a plate, refrigerate. In meantime, pat each steak on both sides with pepper and salt. Heat a heavy bottomed fry pan (cast iron is great!) over high heat, adding just a splash of grapeseed oil and spread around the pan. When pan is very hot, add the steaks and sear about 4 - 5 minutes and then turn over and sear another 2 - 3 minutes. Reduce heat to medium and allow to cook gently for about 5 minutes, or done to your liking. To serve, arrange some greens over the plates and place the steak on the greens.
