Onion Crispies

From Dorothy McNett's recipes at www.dorothymcnett.com. Great served with grilled fish, sandwiches and veggies of all sorts! They can be made 1-2 hours in advance if necessary.

1 large onion, sliced
2 - 3 tablespoons milk
2-3 tablespoons flour
1/4 teaspoon sea salt
canola oil or grapeseed oil for frying

Thinly slice the onion and cut each section in half. Place milk in a flat bowl, and place the flour and salt in another flat bowl. Heat enough oil in a heavy bottomed fry pan to be about 1 inch deep. Stir the onion slices in the milk and then into the flour to coat them generously. When oil has reached 350 degrees, place them in the pan and cook several minutes to brown and crispen, doing small batches at a time and using a skimmer remove the cooked ones to a paper towel lined baking sheet. Serve alongside of any main dish and/or sandwiches. etc. .
