Manhattan Thousand Island Salad

2 eggs, hard cooked
fresh bibb and iceberg lettuce
1/2 cup mayonnaise
1/4 cup catsup
1 - 2 tablespoons dill pickle, diced
1 - 2 teaspoons creamed horseradish
1-2 cloves garlic, very finely minced
1/2 teaspoon mustard seed
1/4 teaspoon celery seed
freshly ground pepper
1/2 teaspoon sea salt
freshly grated Parmesan cheese for sprinkling

Hard cook 2 - 3 eggs and allow to cool. Dice and set aside. Tear lettuce and place into a large salad bowl. In a glass measuring cup, whisk together the mayonnaise, catsup, diced pickle, horseradish, garlic, seeds, pepper and salt. Toss into the salad bowl of greens along with the diced eggs. Sprinkle with cheese and serve.
