Orange Coriander Carrots

From Dorothy McNett's recipes at www.dorothymcnett.com. To retain more of the natural nutrients in the carrots, cook them in a glass or ceramic dish or plate in a microwave. The results are splendid!

2 tablespoons extra virgin olive oil, or unsalted butter
1 teaspoon coriander seeds, lightly crushed (or powdered if desired)
1 teaspoon raw sugar
5-6 small fresh carrots, trimmed and sliced as needed
zest of 1 orange
2 tablespoons orange juice
1/4 teaspoon sea salt
freshly ground pepper
snipped fresh parsley and fresh cilantro for garnish

Put the oil or butter, coriander and sugar in glass or ceramic batter bowl or other baking dish, Heat 1 minute in microwave. Stir in the carrots, zest, orange juice, salt and pepper. Cover with a glass or ceramic lid or plate and cook 3-5 minutes. Arrange on serving platter, pouring the liquids over and garnish with snipped parsley and cilantro.
