Summer Salad Deluxe

From Dorothy McNett's recipes at It is the fresh corn, uncooked, that makes this one spectacular salad to enjoy in the summer when fresh produce like this is available.

1 small yellow crookneck squash, or zucchini, unpeeled
1/3 cup Greek yogurt
1 tablespoon local honey
1/4 teaspoon sea salt
1-2 sprigs fresh parsley or cilantro
1/3 cup extra virgin olive oil
1/2 head or more of Romaine or other lettuce
1 ear fresh corn on the cob, uncooked
2-3 radishes
1 stalk celery

In food processor with steel chopping blade in place, finely chop the zucchini. Whirl in the yogurt, honey, salt, parsley or cilantro and then add the olive oil to make a dressing. Set aside. In salad bowl tear the romaine lettuce. Husk and desilk the corn and with a knife slice off the kernels onto the greens. Scrape remaining corn and pulp from the cob and add to the salad along with sliced radishes and celery. Toss in the dressing and serve!
