Flax Seed Crackers

From Dorothy McNett's recipes at www.dorothymcnett.com. Use as a snack or an appetizer, or serve with soups and salads.

3/4 cup flax seeds, ground to make 1 cup of flax meal
1/3 cup freshly grated Parmagiano-reggiano cheese
1 teaspoon ground mustard
1/2 cup water or broth

cheeses, dips, peanut butter, etc. for enjoying these

Preheat oven to 400 degrees and line 2 baking sheets with silicone mats or parchment paper. If you are grinding your own seeds, place in a small blender or grinder. It usually takes about 3/4 cup of the seeds to make 1 cup of flax meal, but measure to be sure. Or, purchase already ground flax meal. Combine all ingredients in a bowl and with a spoon scoop out about 1 tablespoon of the mixture and place on prepared baking sheets. With your hands or with the back of the spoon, flatten each out to about 1/8 inch thickness. This makes about 8 - 10 crackers. Place in hot oven and bake about 15 minutes, or until browning and crisping. Remove to a cooling rack, allow to cool. Serve as desired.
