Irish Soda Bread

From Dorothy McNett's recipes at www.dorothymcnett.com.

4 cups all purpose unbleached flour, or whole wheat flour
1 teaspoon sea salt
2 teaspoons baking soda
1 1/2 teaspoons cream of tartar
2 tablespoons unsalted butter, room temperature
1 1/4 cups buttermilk

Preheat oven to 425 degrees. Place a silicone baking mat on a baking sheet and set aside. In batter bowl whisk together the flour, salt, baking soda and cream of tartar. Cut in the butter and then add the buttermilk to make a soft dough. Dump onto a lightly floured surface and hand knead for 1 minute. Shape into a round ball, place on lined baking sheet. With a sharp knife, cut a deep X into the top. Bake 40-45 minutes until nicely browned. Cool for about 10 minutes or more on a rack, and then slice and serve!
