Plum Jam in Small Batches
From Dorothy McNett's recipes at www.dorothymcnett.com. This makes a small quantity so all you need to do is cook it and pour into small bowls or cups and refrigerate. Use it within 2 - 3 months but it will be eaten up before that!
2 cups chopped fresh plums
In glass or ceramic batter bowl, combine plums, sugar and juice. Cook in microwave 10 minutes, uncovered. Stir very well to dissolve any sugar remaining on the bottom, adding another minute if necessary. Stir in the pectin and cook 1 minute. Pour into cups or bowls and allow to stand at room temperature until cool and then refrigerate, using within 3 months.
