Cupcakes are so rewarding and you can easily share with friends and neighbors! If you do not wish to make cupcakes, spread this into a 9 inch square baking pan. 3 cups unbleached all purpose flour Preheat oven to 350 degrees. Line a 12 portion cupcake pan with paper cupcake liners, or thoroughly brush with olive oil if not using liners. In bowl whisk together the flour, baking powder, salt and cocoa. Set aside. In batter bowl, using electric beater or a hand whisk, thoroughly mix the soft butter with the sugar, eggs, vanilla and milk to make it nice and light and fluffy. Remove beater and using a spatula thoroughly blend in the flour mixture along with the granola. Spoon into the cupcake pans, filling nearly to the top of each. Batter will be thick,no need to smooth it off just let it be slightly peaked. Bake 30 - 35 minutes, or until nicely browned and tests done when lightly touched with your finger. Set aside to cool on a rack. For the frosting, in a heavy bottomed skillet heat the butter gently until browned, but not burned. Blend in sugar, milk and vanilla.
