From Dorothy McNett's recipes at www.dorothymcnett.com. You can easily adjust the quantities, more or less tomatoes as needed to serve each person 1 - 2 halves as a great vegetable side dish.
3-4 fresh medium sized tomatoes
Preheat oven to 400 degrees. Cut each tomato in half and arrange cut side up on a baking sheet with sides, or other shallow baking dish. In a bowl combine bread crumbs, herbs, chopped garlic, chopped parsley, salt, pepper and olive oil. Press the crumb mixture over and gently into the tomatoes. Bake 10 - 12 minutes or until the topping has browned a bit and tomatoes are heated but not falling apart!
