Squid Stir-Fry

From Dorothy McNett's recipes at www.dorothymcnett.com. Great as a salad addition, or serve as a garnish on top of rice dishes or other stir fry dishes.

1 - 2 squid steaks
1/4 to 1/2 teaspoon freshly ground pepper
pinch of Chinese 5 spice powder, or other seasonings as desired
1 - 2 tablespoons soy sauce, if desired
1 - 2 tablespoon extra virgin olive oil

Cut the squid into small pieces or rings. Marinate about 30 minutes in a mixture of pepper, spices and soy sauce. When ready to cook, heat a small skillet or stir fry pan to moderate heat, add the olive oil and heat just to get it nicely hot but not smoking hot. Stir in the squid with the juices and stir fry just about 1 minute, or until squid is done. Do not over-cook! Serve as it, or toss into a salad or add to rice dishes, etc.
