Sofrito (Cuban sauce)

From Dorothy McNett's recipes at One of many sauces to make for serving with beans, rice, meats, vegetables, fish, pastas, etc...

2 tablespoons extra virgin olive oil
1 small onion, chopped
4 cloves garlic,chopped
1 green or red bell pepper, chopped
1 teaspoon dried oregano
1/2 teaspoon sea salt
1/4 - 1/2 teaspoon freshly ground pepper
1/2 teaspoon ground cumin
1- 2 bay leaves
1 - 2 fresh tomatoes, finely chopped
3/4 cup tomato sauce

In heavy bottomed saute pan heat the oil and then saute the chopped onion, garlic and bell pepper several minutes. Add oregano,salt, pepper, cumin and bay leaves. Cook over medium heat 4- 5 minutes to make a thickened sauce. Add the chopped tomato and the tomato sauce. Cook and stir to blend flavors and to make a nice rich looking sauce. Remove the bay leaves.
