Sea Bass with Sofrito
From Dorothy McNett's recipes at www.dorothymcnett.com. Make the Sofrito (see recipe) and then sear up some sea bass and serve together along with black beans and rice.
2 - 3 sea bass fillets
Lightly salt and pepper the fish. Heat the butter or oil in a large heavy bottomed skillet or saute pan. Saute the fish until lightly browned on both sides, just a few minutes each side. Remove from pan. Add the wine to the pan, stirring up any browned bits in the pan and then add the sofrito. Heat thoroughly and pour over the fish. Garnish with snipped chives, parsley and or cilantro. Serve with additional sofrito.
