Summertime "Pizza"

From Dorothy McNett's recipes at www.dorothymcnett.com. Another variation of the pizza! Quick and easy and very tasty.

2 - 3 large pita breads (whole wheat if available)
3 - 4 cloves garlic
4 cups fresh kale, chopped
1/2 cup fresh basil
1/4 cup pine nuts
zest and 1 tablespoon lemon juice
1/2 teaspoon sea salt
2 tablespoons extra virgin olive oil

2 cups shredded mozzarella
2 - 3 small tomatoes, thinly sliced
1 small red bell pepper, or baby sweet peppers, sliced
1 shallot, minced
2 - 3 green onions, sliced
3-4 fresh mushrooms, sliced

Preheat oven to 450 degrees. Place the pitas on baking sheets or pizza pans. In food processor with steel chopping blade in place and the motor running, drop in the garlic to mince. Then add the chopped kale, basil, pine nuts,zest and juice of lemon and salt and chop finely. With motor running, add the olive oil to make a nice paste or sauce. Spread the sauce over the pita breads and cover with half of the cheese. Arrange the sliced tomatoes, red pepper, shallot, green onions and sliced mushrooms over the sauce and cover with the remaining cheese. Bake about 10 - 15 minutes. Slice and serve!
