Bellini Cocktail

From Dorothy McNett's recipes at Harry's Bar in Venice about 1934-1948, named after 15th century painter, Giovanni Bellini. Favorites of E. Hemmingway, Sinclair Lewis, Orson Welles and lots more!! Need sweet, really ripe fruit!

2 parts Prosecco, chilled
1 part fresh white peaches, peeled and trimmed of all rough spots

Peal the peaches if necessary. Whirl the peaches in food processor to make a very smooth puree. Put into tall champagne glasses and add the chilled Prosecco.
