Green Pea Soup

From Dorothy McNett's recipes at www.dorothymcnett.com. Use fresh peas when available, or buy a package of petite frozen peas. Make your own broth, or use a good quality boxed one.

2 tablespoons extra virgin olive oil, or unsalted butter
1 shallot, or small onion, finely chopped
3 - 4 cloves garlic, finely chopped
3 - 4 cups vegetable broth (unsalted or low-sodium)
2 cups fresh or frozen green peas
sea salt and freshly ground pepper, as needed or desired
1/4 cup freshly grated Parmesan cheese

In saucepan or stir fry pan heat the olive oil or butter and then saute the chopped onion and garlic several minutes to soften and to develop the flavors nicely. Add the broth, bring to a boil and then add the peas. Simmer about 3 - 4 minutes. Serve in soup bowls or cups and sprinkle liberally with grated Parmesan.
