Frosting On The Cake

From Dorothy McNett's recipes at www.dorothymcnett.com. Using extra virgin olive oil instead of the usual butter, but of course you could substitute softened unsalted butter for the olive oil if desired!

1 cup powdered sugar (organic is best)
1/4 cup extra virgin olive oil
1/2 teaspoon vanilla bean paste

In a small bowl or a 2 cup glass measuring cup, whisk the sugar and blend in oil and vanilla. Adjust the thickness with more oil or more sugar. Spread or drizzle on cakes, cookies, sweet breads, pancakes, waffles....
