Denver / Deutschendorf Omelet

Fromm Dorothy McNett's recipes at Born Henry John Deutschendorf, John Denver changed his name early in his career and loved Colorado so he choose John Denver as his name. Serve this omelet with sliced tomatoes and lettuce and sing his song "Bacon 'n lettuce 'n home grown tomatoes"...

6 - 8 slices bacon, cooked and crumbled
1 small onion, chopped (to measure about 1 cup)
1/2 green bell pepper, chnopped
1/2 red bell pepper, chopped
1/2 cup diced ham
2 tablespoons unsalted butter
4 eggs
1/2 teaspoon sea salt
1/2 teaspoon freshly ground pepper
sliced fresh red ripe tomatoes, home grown if possible
lettuce leaves
more bacon, if desired

Cook the bacon until nice and crispy and crumble into bite sided pieces. Set aside. Chop the onion, bell pepper and dice the ham. In heavy bottomed 9 - 10 inch skillet heat the butter to melt and then toss in the chopped onion and peppers. Cook and stir about 2 minutes and then add the diced ham and the crumbled bacon, stirring to heat thoroughly. In a bowl whisk the eggs, adding salt and pepper. Pour over the vegetable mixture, stir around just a bit and then cook over medium heat about 1 minute or more to set up the eggs and to lightly brown the bottom. Flip the omelet over and continue to cook to brown the bottom. Slide out onto a serving platter. Garnish with sliced tomatoes, lettuce, and more bacon if desired and start singing!
