Orange Chocolate Truffles

From Dorothy McNett's recipes at www.dorothymcnett.com. The orange comes from the color of the carrot juice...a great Halloween and Thanksgiving candy treat!

2 cups white chocolate chips
3 tablespoons heavy whipping cream
3 tablespoons carrot juice
semi-coarse sea salt
pine nuts or other slender nuts for the stems
crackers or cookies (ginger snaps are great)

Combine chocolate chips, cream and juice in a glass or ceramic batter bowl. Heat in microwave for 1 minute. Stir to finish melting the chocolate, adding another 30 seconds if needed to melt completely. Stir to blend. Set aside to cool at room temperature 2 hours or more. Using a teaspoon, scoop out the firm chocolate and shape into rough truffle shaped balls and place on a cracker or cookie. Sprinkle with a few grains of semi-coarse sea salt as desired, or powdered sugar, etc. To make a "pumpkin", stick a pine nut or other slender nut into the top for the stem.
