Pesto

From Dorothy McNett's recipes at www.dorothymcnett.com. Basic and easy and so delicious as a dip or as a salad dressing.

4 - 8 cloves garlic (you get to decide!)
1/4 cup pine nuts
1 1/2 cups fresh basil leaves, washed and patted dry
1/3 cup freshly grated Parmesan or Pecorino cheese
1/3 cup extra virgin olive oil

In food processor with steel chopping blade in place, whirl the cloves of garlic to mince them finely and then add the pine nuts, basil, and cheese. Whirl to make a paste and with the motor running, drizzle in the oil. Serve as a dip, or use for a salad dressing or in any recipe calling for pesto sauce.
