Baked Matchstick Potatoes

From Dorothy McNett's recipes at

2 russet potatoes
2 medium sized sweet potatoes or yams
3-4 or more garlic cloves, cut in half
1/4 cup grapeseed oil, or extra virgin olive oil
sea salt and freshly ground pepper

Preheat oven to 425 degrees. Scrub the potatoes and peel them if needed. Slice them into long slices like French Fries. Peel and then cut the garlic cloves in half lengthwise. Scatter potatoes and garlic over a baking sheet with sides, tossing in the oil, sprinkles of salt and pepper. Bake about 25 - 35 minutes, stirring them at least once. They will turn brown and get a bit crispy but do not let them burn. Arrange on a platter and serve!
