Fuyu Persimmons with Goat Cheese Appetizers

2-3 fuyu persimmons (they are the hard ones, not the soft ones)
Wash and slice the persimmons into finger food sized serving pieces. Spread or mound with some of the goat cheese and sprinkle with finely snipped parsley. Arrange on a serving platter. And if you wish, you could place a second slice of the persimmon on top of the cheese to make a tiny little sandwich.
