Baby Potatoes On a Bed of Greens and Cheese

From Dorothy McNett's recipes at An appetizer, an after school snack, a side dish, and even toss them into a salad.

10 - 12 small round baby potatoes
1/2 teaspoon extra virgin olive oil
pinches of sea salt
lots of fresh greens
assorted cheese chunks, or grated, as desired

Very carefully scrub the potatoes and remove any stem ends, etc. Place in a glass or ceramic batter bowl and drizzle with the olive oil and sea salt. Cover with a glass or ceramic plate or lid. Cook in microwave about 5 - 6 minutes until tender. Set aside to cool. Arrange lots of greens on a beautiful platter and scatter the potatoes and chunks of cheese on top. Great served as an appetizer or snack at any time of the day.
