Baby Potatoes On a Bed of Greens and Cheese
From Dorothy McNett's recipes at www.dorothymcnett.com. An appetizer, an after school snack, a side dish, and even toss them into a salad.
10 - 12 small round baby potatoes
Very carefully scrub the potatoes and remove any stem ends, etc. Place in a glass or ceramic batter bowl and drizzle with the olive oil and sea salt. Cover with a glass or ceramic plate or lid. Cook in microwave about 5 - 6 minutes until tender. Set aside to cool. Arrange lots of greens on a beautiful platter and scatter the potatoes and chunks of cheese on top. Great served as an appetizer or snack at any time of the day.
