Cheese Apricot Balls / Appetizers

From Dorothy McNett's recipes at www.dorothymcnett.com. This is always a big hit for a nice holiday appetizer or even as a side dish to a tossed salad, etc. Use any nuts of choice, or even a combination. They can be raw, or they can be roasted and salted. Each time you make this, it will have a different delightful taste!

8 oz. cream cheese, softened at room temperature
1/2 cup finely chopped dried Blenheim apricots
1/2 cup chopped walnuts, or hazelnuts, or pecans or other choices
1/4 cup sesame seeds or poppy seeds
a few sprigs of freshly snipped parsley
apple wedges, or crackers for serving

In a batter bowl stir or beat the cheese until smooth. Stir in the chopped apricots and chopped nuts. On a cutting mat or parchment paper, shape it into a log about 8 inches long. Sprinkle with the seeds. Wrap with plastic wrap and chill about 30 minutes or overnight. When ready to serve, slice the cheese long into 1/2 inch slices and place on apple wedges or crackers and sprinkle with the snipped parsley.
