Smoked Salmon Sauce or Gravy
From Dorothy McNett's recipes at www.dorothymcnett.com. Use as a pasta sauce, or serve with freshly cooked or raw vegetables. Smoke some fresh salmon, or purchase some deli smoked salmon.
3 - 4 oz. smoked salmon, finely diced
Smoke some fresh salmon (see recipe) or use about 4 oz. smoked salmon. Dice it finely and set it aside. In heavy bottomed saucepan heat the butter or oil and whisk in the cornstarch, salt and pepper and then slowly add the stock and wine, whisking constantly. Blend in the cream, dill and the smoked salmon. Simmer gently for about 2 minutes. Serve over cooked pasta or vegetables, or both!
