Smoked Salmon Sauce or Gravy

From Dorothy McNett's recipes at Use as a pasta sauce, or serve with freshly cooked or raw vegetables. Smoke some fresh salmon, or purchase some deli smoked salmon.

3 - 4 oz. smoked salmon, finely diced
2 tablespoons unsalted butter or extra virgin olive oil
4 teaspoons cornstarch
pinches of sea salt and freshly ground pepper
1 cup seafood or vegetable stock, warmed
1/4 cup white wine
2/3 cup cream or half and half,
1 - 2 teaspoons fresh dill, snipped fine

freshly cooked pasta, or rice, or cauliflower, etc.....

Smoke some fresh salmon (see recipe) or use about 4 oz. smoked salmon. Dice it finely and set it aside. In heavy bottomed saucepan heat the butter or oil and whisk in the cornstarch, salt and pepper and then slowly add the stock and wine, whisking constantly. Blend in the cream, dill and the smoked salmon. Simmer gently for about 2 minutes. Serve over cooked pasta or vegetables, or both!
