Iceberg Lettuce with Applesauce Dressing

From Dorothy McNett's recipes at www.dorothymcnett.com. So different, and so very special!

2 apples, red or green
1/3 - 1/2 cup raw sugar
1/4 teaspoon sea salt
3 - 4 cloves of garlic
1/4 - 1/3 cup extra virgin olive oil
1 medium sized head of iceberg lettuce
1 - 2 ribs of celery
seeds,nuts, etc. if desired
small chunks of cheese, if desired

Wash but do not peel the apples. Cut into small pieces, removing the core and seeds as you work. Put into a glass or ceramic batter bowl and toss in the sugar and salt. Cook in microwave for 5 minutes, stir. Add another 3 - 4 minutes or until apples are cooked nicely. Set aside to cool. When cool, using a food processor with the steel chopping blade in place and the motor running drop in the cloves of garlic to chop them nicely. Add the cooled apples and whirl to blend and mash them smoothly. With motor running drizzle in the olive oil to make the dressing. Tear the iceberg lettuce into small pieces and put into a salad bowl along with the diced celery. Toss in the apple dressing and add any seeds, nuts, cheese, etc. as desired.
