New Mexican Burritos

From Dorothy McNett's recipes at Use anasazi or pinto beans, either freshly cooked or use good quality canned ones.

2 cups freshly cooked or canned pinto beans, drained
1/2 teaspoon sea salt
2 - 3 cloves garlic, chopped
2 teaspoons oil, butter or bacon drippings
6 - 7 flour tortillas
2-3 green onions, sliced
1/2 - 3/4 cup grated Monterey Jack,, or cheddar cheese
romaine lettuce leaves
red or green chili sauce for serving

Preheat oven to 350 degrees. Mash the beans with the salt and chopped garlic. In a skillet heat the bacon drippings or oil or butter. Fry the mashed bean mixture several minutes. In meantime, wrap the tortillas in a cloth napkin or towel and warm in microwave for about 1 minute. Spoon the hot bean mixture down the center of each warm tortilla and then top with the sliced green onions and shredded cheese. Roll and place on a baking sheet and bake about 10 - 12 minutes to melt the cheese. To serve, place roughly torn romaine on serving plates and top with the burritos. Serve with sauces as desired. To eat, pick up a burrito with your hand and hold your little finger on the bottom of the cylinder. Take a bite out of the top of the cyilinder and then spoon in chili sauce as you take each bite, as desired!
