Onion Sauce for Pork Loin

From Dorothy McNett's recipes at www.dorothymcnett.com. This is a great sauce to serve with Portuguese Pork Loin along with the typical Anchovy Butter Sauce so that there is a nice sauce (or two) to please everyone's taste buds! This recipe can easily be cut in half if desired.

3 cloves garlic
1 medium onion, quartered
1/4 cup fresh parsley snipped
2 hard cooked eggs
1 cup extra virgin olive oil
1/4 cup white wine vinegar
1/4 teaspoon sea salt
1/4 teaspoon freshly ground pepper
1/4 teaspoon sweet paprika

First cook the eggs, peel and set aside to cool. In food processor or blender, whirl the garlic and then the onion along with the parsley. Add the eggs, olive oil, vinegar, salt, pepper and paprika and whirl to make a sauce. Serve with cooked meats and vegetables. Use any leftover sauce as a great salad dressing next day!
