Grilled Cheese Croissant Sandwiches

From Dorothy McNett's recipes at Apparently this was a favorite sandwich of the Duchess of Windsor! Me too!

1 - 2 croissant rolls
1 - 2 teaspoons soft unsalted butter (room temperature)
1 - 2 thin slices yellow or white sharp cheddar cheese (or use a combo)

Slice each croissant in half lengthwise. Spread the cut sides of both sections with softened butter. Preheat a heavy bottomed griddle pan or large skillet over high heat and when nice and hot reduce heat to medium. Carefully place the buttered side of the croissant halves in the hot skillet and cook about 1 minute or so to lightly brown the cut surfaces. Place the cheese on each bottom section, cover with the top section and continue to grill over medium heat 1 minute, until nicely browned. Using a spatula, flip over and cook on second side until nicely browned and cheese is starting to melt. Remove to serving plates and serve.
