Papaya and Salami Salad from the Bahamas

From Dorothy McNett's recipes at www.dorothymcnett.com. Pineapple can be used instead of the papaya, or use a combination of both.

1 papaya, finely chopped
1 green bell pepper, finely chopped
1 small tomato, finely chopped
1 small onion, finely chopped
2 - 3 tablespoons fresh parsley, snipped
3 -4 slices salami, finely chopped
2 hard cooked eggs, quartered and diced
1/4 cup extra virgin olive oil
2 tablespoons white wine vinegar
1/2 teaspoon sea salt
freshly ground pepper

Toss together the chopped papaya, green pepper, tomato, onion, parsley and salami in a salad bowl. Gently toss in the diced eggs. In measuring cup, whisk together the oil, vinegar, salt and pepper and toss it over. Serve!
