Haupia (Coconut Pudding Squares)

From Dorothy McNett's recipes at www.dorothymcnett.com. Serve a is, or serve with any fresh fruit in season. Also good with a drizzle of dark chocolate sauce.

1 2/3 cup coconut milk
6 tablespoons raw sugar
6 tablespoons cornstarch
3/4 cup water
1/2 teaspoon vanilla or coconut extract
toasted coconut for serving
diced or sliced fresh fruits for serving, or chocolate sauce

In heavy bottomed saucepan pour in the coconut milk. In a measuring cup whisk together the sugar, cornstarch and water. Heat the pan of coconut milk to warm it but not to let it boil. Whisk in the cornstarch mixture and continue to cook and stir over medium heat to thicken. Do not let it boil, keep it just under the boil. When mixture coats a spoon nicely and is "thickened" pour it into a 8 by 8 inch baking dish. Allow to cool about 20 minutes and then refrigerate 1 -2 hours to firm. To serve, cut into 2 inch squares and place on dessert plates. Garnish with toasted coconut and fruit or chocolate as desired.
