Also good with a drizzle of dark chocolate sauce or a nice vanilla bean sauce. 1 2/3 cup coconut milk In heavy bottomed saucepan pour in the coconut milk. In a measuring cup whisk together the sugar, cornstarch and water. Heat the pan of coconut milk to warm it but not to let it boil. Whisk in the cornstarch mixture and vanilla or coconut extract and continue to cook and stir over medium heat to thicken. Do not let it boil, keep it just under the boil. When mixture coats a spoon nicely and is "thickened" pour it into a 8 by 8 inch baking dish. Allow to cool about 20 minutes and then refrigerate 1 -2 hours to firm. To serve, cut into 2 inch squares and place on dessert plates. Garnish with toasted coconut and fruit or chocolate as desired. Also great drizzled with Vanilla Bean Sauce.
