Kona Yams in Casserole

5 - 6 medium sized yams
1/2 cup pineapple juice
1/2 cup orange juice
2 tablespoons unsalted butter
1/2 cup raw sugar
1/2 cup macadamia nuts, roughly chopped
pinches of Hawaiian pink sea salt

Scrub the yams, peeling away as much of the peeling as desired, especially all of the "rough" spots. Cut into cubes and place in a glass or ceramic batter bowl. Cover with a glass or ceramic plate or lid. cook in microwave 10 minutes. Stir and test for doneness, adding another 2 - 3 minutes if necessary. Or, put potatoes in a pan, cover with water, and bring to a boil and then reduce to simmer and cook about 30 minutes or until tender and then drain them from the water. Either way, put the chunks in a bowl and mash them, adding the juices, butter, sugar, nuts, and sea salt. Pour into a 9 by 13 baking dish. Bake in 325 degree oven for about 30 minutes, until lightly browned on the top.
