Lace Cookies

From Dorothy McNett's recipes at

1 cup unsalted butter
2 cups raw sugar
2 1/4 cups rolled oats
3 tablespoons unbleached all purpose flour
1 teaspoon fine sea salt
1 egg, whisked
1 teaspoon vanilla or vanilla bean paste

Preheat oven to 375 degrees. Line 2 baking sheets with silicone baking mats or parchment paper. In glass batter bowl melt the butter in microwave 1 minute. Whisk in the sugar to blend nicely. Blend in the oatmeal, flour, salt, whisked egg and vanilla. Drop by teaspoons onto the baking sheets, leaving about 2 inches between each one so that they can spread out while baking. Bake 7 - 8 minutes. Remove from oven to a cooling rack and allow to stand about 1 minute or more before removing with a spatula. Allow to cool completely.
