Tuckseedo Sauce (Tuxedo Sauce!)

From Dorothy McNett's recipes at www.dorothymcnett.com. OK, so I am playing around with words to name this sauce recipe, but it tastes good no matter what you call it! Since I am tucking in some nutritious natural hemp seeds that are now nicely in fashion, it makes a lot of sense to call it Tuckseedo Sauce! Serve with steaks, pork, ham, chicken, vegetables and more!

1 medium onion, finely minced
2 tablespoons unsalted butter
1/2 cup dry white wine
1 cup beef broth
1 tablespoon Dijon mustard
1/4 teaspoon sea salt
1/4 teaspoon freshly ground pepper
2 tablespoons hemp seeds

Finely dice the onion. In a heavy bottomed saucepan melt the butter and then add the onion. Reduce to medium heat and cook, stirring often, for about 6 - 7 minutes to lightly brown the onion. Add the wine, bring to a boil, and reduce by about 1/2 and then add the broth, mustard, salt and pepper. Cook over medium heat, stirring often, to reduce the sauce to a drizzling gravy sauce consistency. Stir in the hemp seeds. Pour into a tuxedo serving bowl. (a traditional oval glass or pottery gravy boat that has a pouring spout on one side and a handle on the other side.)
