Well Dressed Crab Soup in Fashion Now!

1/4 cup extra virgin olive oil
1/4 cup unbleached all purpose flour, or gluten free flour
1/2 teaspoon fine sea salt
1/4 teaspoon freshly ground pepper
dash of cayenne
2 cups milk
2 cups seafood or vegetable broth
1 1/2 cups diced cooked crab meat
small dollops of blue cheese for garnish

In heavy bottomed saucepan or stir fry pan heat the oil and then whisk in the flour, salt, pepper and cayenne. Slowly whisk in the milk and then the broth. Bring to a boil, reduce to medium and cook, whisking, for several minutes to thicken. Stir in the crabmeat and heat but do not let it come to a full rolling boil. Taste, correct seasonings and put into serving bowls. Sprinkle the tops with some blue cheese for the fashionable touch!
